Organic Apple Snack Cake Recipe

I first started making apple cake a few years ago when I was looking for a sweet and healthy snack for my family. I used one recipe from Kitchen Stewardship for a while, but it was a little too moist for my family. Then, I tried one recipe in America's Test Kitchen Family Cookbook, but it was a little to high in fat. I've merged the ideas from both recipes to create my own!



Organic Apple Snack Cake by Renee 
Ingredients:
3/4 cup organic brown sugar
1/2 stick of organic butter
2 cups organic white wheat flour
1 TBS baking powder
1/4 tsp salt
2 organic eggs

1 cup organic applesauce
zest of 1 organic lemon

splash of organic lemon juice
2 organic granny smith apples, diced small

Optional Ingredients for Icing:
Powder Sugar
Organic Lemon Juice

Directions:
1. Preheat oven to 325 degrees with oven rack in the middle of the oven and grease a 9x13 glass dish with butter (or, if you're lazy like me, line it with parchment paper).
2. Mix butter and sugar in a stand mixer for about 3 minutes.
3. In a separate bowl, mix together the flour, baking powder, and salt.
4. Into the sugar mixture, mix in one egg at a time until it is fully incorporated.
5. Add in the applesauce, lemon zest, and lemon juice to the sugar mixture and mix until combined.
6. Slowly add in the flour mixture until just combined. Do NOT over-mix the batter.
7. Gently fold in the small diced apples.
8. Pour into greased or lined pan and level it out using the back of a spoon or a spatula.
9. Cook for about 20 minutes or until the edges are golden brown and a toothpick comes out clean.

10. If you want them lightly iced, make a glaze of powdered sugar and lemon juice and spread on top.
