A while back, Sophie asked me to start posting my menu plans again so that she could borrow ideas from them. In light of her request, I'm here to post a menu again. It's been a long time since I've posted a menu, but I've still been making them each week!
Monday: (my daughter is making dinner) Goat cheese sandwiches with red pepper slices and pita chips
Tuesday: soft tacos with refried beans, shredded cheese, shredded lettuce, diced tomatoes, jalapeƱos, and sour cream; chips and salsa
Wednesday: baked spaghetti (trying a new recipe from Martha Stewart)
Thursday: vegetarian enchiladas
Friday: leftovers
Saturday: breakfast for dinner (quinoa pancakes, eggs, and a smoothie)
Sunday: pizza and a movie (or Mythbusters)
