Delicious Quinoa Muffins! (Organic)

I've tried several quinoa recipes in the past two days. My favorites so far are the quinoa pancakes and these quinoa muffins. I found the recipe on Martha Stewart's site. I've re-written the original recipe and added my own adjustments down below; click over the her site for a nice picture! I used all organic ingredients, except for the chocolate chips which are the only allergy friendly brand my daughter can eat.

Ingredients:
2 cups cooked quinoa
2 cups AP flour
3/4 cup packed dark brown sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup of chocolate chips

1/4 cup canola oil
3/4 cup whole milk
1 large egg
1 teaspoon vanilla

Directions:
1. Preheat oven to 350 degrees F. Put cupcake liners into a mini-muffin pan. The recipe makes about 36 mini-muffins or 12 regular sized muffins.
2. In a medium bowl, whisk together the ingredients from the quinoa to the chocolate chips.
3. In a small bowl, whisk together ingredients from the oil to the vanilla.
4. Fold liquid mixture into flour mixture until just combined.
5. Divide batter into muffin liners. The muffins don't rise a lot so fill the muffin liner almost to the top.
6. Bake until a toothpick is inserted and comes out clean of crumbs. You may have to try a few times so you don't get chocolate on your toothpick! They will take 20-25 minutes, for the mini size.
7. Cool muffins in tins for about 5 minutes and then turn out onto cooling racks.
