Updated Tortilla Recipe

2 cups all purpose flour
2 cups white whole wheat flour
1 tsp salt
1 tsp baking powder
3 Tbs butter
1.5 cups water

1. Whisk flours, salt, baking powder
2. Mix in cold butter cubes with hands until flour resembles cornmeal
3. Add water; mix until dough comes together
4. Knead until very smooth and elastic on floured work surface
5. Divide dough into 24 equal pieces and roll into balls
6. Let sit for 25 minutes, covered with wet towel
7. Begin heating pan at 25 minutes
8. Roll balls into thin tortilla shape on floured surface
9. Put tortilla in pan and flip once it starts to bubble or brown
10. Move tortilla to a plate where a wet towel is laid over the plate. Sit the tortilla on the towel and fold the towel over the tortilla. Stack the tortillas on each other. Let steam. Repeat.
