Monday's Menu (A bit early)

I've been off the bandwagon with menu planning, and it's really been bothering me because I feel so un-accomplished come dinner time. I'm throwing anything I can find together and no one is eating a well-balanced meal.

So, this week, my daughter and I spent a lunch time figuring out a menu for two weeks. When my husband got home, he was required to suggest one meal, too, so that we all had things on the menu we liked to eat. The very funny thing about the menu is that I haven't followed it at all (it started on Wednesday)!!! But, I've just been moving around the days based on the weather/outdoor time/etc so it's still felt orderly.

Friday: Spaghetti and meatballs (thanks for the meatball recipe, Jane!! I used 93/7 beef, and they were great. The sauce turned into something out-of-this world after simmering the meatballs. Just make sure you simmer them long enough to cook the meatballs all the way.)

Saturday: Quesadillas with homemade tortillas (These were the best tortillas!!! In the quesadillas, I put a blend of cheeses, corn, and refried beans.)

Sunday: Hot dogs with homemade buns (My buns are on the first rise so I don't know how they'll turn out yet.....)

Monday: Goat Cheese Ravioli

Tuesday:  Quasi-nachos (my daughter likes the parts, but not all together.)

Wednesday: Sloppy Joes with homemade buns

Thursday: Pancakes and eggs

Friday: Calzone Rolls (this is a new recipe)

Saturday: Elbow mac and cheese with basil, cheese, and tomatoes

Sunday: Hamburgers with homemade onion rings (my husband's request)
