Fish Taco Salad - high protein, meatless meal


Doesn't this look tasty??? Trader Joe's has a allergy friendly taco seasoning. I cooked the Mahi Mahi fully and broke it up into pieces. Then I added about a quarter of the taco seasoning with some tomato sauce and simmered it for about five minutes.

I put bowls of each filling on the table:
Mozzarella
Cheddar
Lettuce
Tomatoes
Red Onions
Chips
Salsa
Fish
Sour Cream
Guacamole

Each person filled their bowl however they wanted to fill it, and my daughter loved it!


Our friend who was eating with us hadn't had taco salad before. Yes, it's strange, but she was a trooper and crushed her chips on the bottom of the bowl just like all of the rest of us!

This would be a great dish for Meatless Monday!
