(This picture is from when I made these cookies with chocolate chips....before this crazy Low-FODMAP diet)
Ingredients:
1 stick of softened butter1 cup of peanut butter
1 cup of maple syrup (real maple syrup)
2 tsp of vanilla
2 eggs
1/3 cup plain greek yogurt
1/3 cup cocoa powder
1 cup oat flour
1 tsp salt
1/4 tsp baking powder
4 cups add-ins (I use 3 cups oats and 1 cup oat bran; if your Low-FODMAP diet is flexible, you can add nuts, dried fruits, coconut flakes, etc)
Directions:
- Preheat the oven to 350 degrees with the racks on the top two positions.
- Whip together the butter, peanut butter, maple syrup, and vanilla.
- Mix in the eggs and greek yogurt
- Gently mix in the cocoa, oat flour, salt, and baking powder.
- Fold in your add-ins.
- Line a cookie sheet with parchment paper or grease with butter.
- Using a 1/4 cup measuring cup, generously doll-up 1/4 cup mounds of the batter onto the cookie sheet. Slightly smush down the batter so it looks cookie shape.
- Bake for about 15 minutes, switch and rotate the pans and cook for another 10ish minutes
- Cool for 5 minutes on the pan before moving to a cooling rack.
