Quick and Easy Baked Cheese Pizza Rolls

(Baked Pizza Rolls)

I originally found this recipe on AllRecipes.com. It had pepperoni and was deep fried so I changed the recipe to meet our vegetarian and lower-fat needs. These remind me a little bit of Lean Pockets (I haven't had one in years so I'm making that statement based on memory).

Baked Cheese Pizza Rolls:

Ingredients:
1 jar of pizza sauce (I like Trader Joe's in the can)
1 cup shredded mozzarella (I like whole milk mozzarella from Trader Joes)
1 14 ounce package of egg roll wrappers (I like NaSoya)
1 egg
3 Tbs water


Directions:
1. Preheat oven with a pizza stone in it to 400 degrees. You want the stone to be very hot.
2. Put the shredded cheese into a medium sized bowl and add enough of the pizza sauce to make the filling. My mixture is usually just a touch liquid-y. You'll want to adjust the amount to the taste of your family's likes.
3. In a small bowl, beat the water and egg together.
4. Lay out one egg roll wrapper on a work surface. Place one tablespoon of the filling at the bottom center of the wrapper, leaving 1/2 inch border on each side. Lightly brush the wrapper edges with the egg mixture. Fold over both sides on top of the mixture; roll up to encase the filling in the wrapper. Repeat with remaining wrappers and filling.
4.  Put the wrappers on the hot pizza stone and bake until golden brown, about 15ish minutes.

Serve with a side of pizza sauce, fruit, veggies, etc. 
NOTE: These heat up well in a hot pan or in a toaster oven.
