Easy Organic Wheat Sandwich Bread

Once again, I found a fabulous bread recipe on FrugalGirl.com: Wheat Sandwich Bread. Every single bread recipe I've tried off of her blog has turned out delicious! This sandwich bread is a staple in our house. It has fabulous texture, is easy to make, and has great taste!

I know there are a lot of steps listed in this recipe, but it's very easy to make, especially after you've made it the first time!

Easy Organic Wheat Sandwich Bread

Ingredients:
1 cup organic whole wheat flour
1 cup organic all purpose flour
1 1/2 Tbs yeast
2 1/2 tsps table salt

2 1/3 cup warm water
3 Tbs organic canola oil
1/4 cup local orange blossom honey

2 cups organic whole wheat flour
1 to 2 cups organic all purpose flour

Directions:
1. In a stand mixer, mix together the first four ingredients.

(NOTE: If you don't have a stand mixer, mix together the first set of dry ingredients, add the wet ingredients, and stir vigorously in the same direction for as long as you can stand it! Add in the 2 cups of the whole wheat flour and enough of the all purpose flour until the dough becomes not very sticky. Dust your clean counter with all purpose flour and start kneading for a about 7-10 minutes, or until the dough ball is very smooth and elastic. Pick up at step 6.)

2. Add the next 3 ingredients into the bowl. Turn the mixer on low and combine. Turn off the mixer and scrape down the sides and the bottom.

3. Turn on the mixer again. Mix the batter for 3 minutes on medium speed. I actually set a timer for this.

4. With the mixer on low, add in the 2 cups of whole wheat flour and enough of the all purpose flour until the dough becomes not very sticky. It should pull away from the sides of the bowl.

5. Dump the dough on a clean counter that is dusted with all purpose flour and knead for about 3-5 minutes or until the dough is smooth and elastic.

6. Put the dough back into the 'dirty' mixer bowl and cover with a clean, wet kitchen towel to let it rise for about 45 minutes, or until doubled.

7. Punch the dough down and divide in half. Roll each half into a ball. Push out the ball into a loosely shaped rectangle shape that's about 9x5. Starting on the long side of the rectangle, roll the dough like you would a jelly roll cake.

8. Put the rolled dough into a buttered bread pan (I prefer glass).

9. Let rise for about 30 minutes (or until doubled) with the same wet towel covering the tops of the two pans.

10. Preheat your oven to 350 while the dough is rising.

11. Bake for 25-35 minutes until it is golden brown and sounds hollow when you knock on it.

12. Let the bread cool on a wire rack for about 10 minutes before trying to turn it out. Run a butter knife along the edges of the pan, and then flip out the bread. By letting it steam in the glass pans, it will release itself from the sides of the pan.
