Fabulous Chewy Granola Bar Recipe


RECIPE:
2.5 cups of rolled oats (I like to try to break these a little bit)
1/4 cups packed brown sugar
3/4 cup flour
3/4 tsp salt
1/2 cup of honey 
1 egg, lightly beaten
1/2 cup applesauce
3 Tbs canola oil
2 tsp vanilla extract
2 Tbs chocolate chips
some extra chocolate chips for the top

1. Preheat oven to 350 degrees F. Line a 9x13 glass baking pan with parchment paper.
2. In a large bowl, mix together dry ingredients, except chocolate chips.
3. Make a well in the center and add wet ingredients (you could mix these together in a separate bowl first, but I just add them into the well as I have them ready.)
4. Mix well, and then add chocolate chips.
5. Pat mixture into pan working hard to get it even.
6. Bake for 20-35 minutes, until bars of golden at the edge and cooked thoroughly. 
7. Sprinkle the top with chocolate chips and let sit for 5 minutes.
8. Spread out the chocolate chips and then cut the bars. I like to do four rows lengthwise and three rows across on the short side. NOTE: do not let them cool for more than 5 minutes without cutting them or else they will be hard to cut.
