Energy Balls

A few months ago I found a recipe for Energy Balls on The Frugal Girl. The name intrigued me, and the ingredients excited me. I have since adapted the recipe to meet our needs better. We go through a triple batch of these each week. If you choose to make a triple batch, I recommend using a mixer. You can make a double batch by hand.


First Blend Together:
1/2 cup organic natural peanut butter
scant 1/3 cup local honey
1/2 tsp homemade vanilla
pinch of salt

Then you should mix-in:
1 cup of organic oats
1/3 cup organic oat bran (You could substitute wheat bran here, but I don't like the way they taste as much)
2 Tablespoons of mini chocolate chips

To make the balls, I recommend getting your hands slightly wet so that the dough doesn't stick to your hands too much. Don't be tempted to add too many chocolate chips because the dough won't hold much more. You'll find a bunch at the bottom of the bowl.

We like ours best refrigerated, but they're tasty at room temp, too!

I made a triple batch today and Papa said they're almost as good as yours :). A great, healthy and yummy snack (treat).
