Monday's Menu and Tuna Casserole toppings

Mondays Menu - I've found that menu planning reduces my stress during the week. It does so by answering the dreaded "What's for dinner tonight?" question and by saving money since I know exactly what I need to buy at the grocery store. Sometimes it's really hard to come up with a menu each week that meets my daughter's allergy needs. My hope is that we can share our menus here to inspire each other with new menu ideas.



This week we had tuna casserole on Friday. It was an extra one that I took out of the freezer. My husband and I love tuna casserole, but alas, I'm going to have to take it off the menu for my daughter. She just doesn't like it. The first time I made it, she ate it. Each time after that, no luck. Friday night, I tried dressing it up with shredded cheddar cheese and crushed Annie's bunnies. My husband and I loved the additions!!!! My daughter still wasn't taken by the meal. Of course, there's always the crushed potato chip option, but she can't eat potatoes.

Monday:  Taco Bake (this is a new recipe...I'll let you know what I think; if it's good, I'll share the recipe)


Tuesday:  Goat cheese ravioli (go to Whole Foods to buy pizza; I didn't make it there last week)


Wednesday: my daughter and her friends will have lasagna that I make earlier in the day; my husband and I are going out for his company party


Thursday:  leftovers


Friday:  Sloppy Joes


Saturday:  Crescent pizza rolls (another new recipe)


Sunday:  leftovers
