Egg Salad

A few years back, I found an egg salad recipe from Everyday Food. They have a PBS show that I find entertaining. Normally, their recipes are straightforward with easy to find ingredients.

8 hard-cooked eggs, peeled and courasley chopped
1/2 cup mayonnaise
2 Tbs chopped celery
2 tsp Dijon mustard
Dashes of hot-pepper sauce to taste
Salt and pepper to taste

Mix everything together in a bowl.
*NOTE: I usually don't have celery in the house, but I do have onions or shallots. I finely dice them and use them instead of celery. Also, for my allergy child, I substitute regular mayonnaise with soy-free mayonnaise. This doesn't age well, so don't expect to use it for leftovers for more than a day.
